Squash Casserole in a Jiffy

It’s summertime and the squash is probably abundant! Take a couple of those yellow beauties and make this Squash Casserole in a Jiffy! If you like corn casserole, you are going to love this one, too! 1. Dice Your Squash

Our sweet friends gave us some squash so I had to make something with it right away, because I love fresh vegetables straight from the garden! Start by dicing two medium squash into 1/2″ size pieces. Also, pre-heat your oven.

2. Add all Ingredients to a Mixing Bowl

Add the diced squash, the Jiffy Corn Muffin Mix, the egg, the milk, and the shredded cheese to a mixing bowl. I love this Glass Mixing Bowl because it has measurements listed on the side. Swipe over below to see all of the pictures of each ingredient being added.

3. Mix Everything then Pour into Baking Dish

Using a fork or spatula, mix everything together. Add salt and pepper if desired.

Add to a greased 8×8 Ceramic Baking Dish and bake on 400 degrees for 35-40 minutes.

4. Bake at 400 Degrees for 35-40 Minutes

Check it at 35 minutes for browning and doneness by using a butter knife in the center. It should look like this when it’s done.

Let it cool for about 10 minutes, covering it with a paper towel. Then, Enjoy! We had it with our meatloaf and it was superb! The savory with the sweetness was mouthwatering! Squash Casserole in a Jiffy

Cook Time: 35 minutes
Additional Time: 10 minutes
Total Time: 1 hour

Ingredients

  • 2 medium yellow squash
  • 1 box of corn muffin mix
  • 1 egg
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper

Instructions

Pre-heat your oven to 400 degrees. Dice the squash into 1/2 inch pieces and add them to a mixing bowl. Then add the next four ingredients; the muffin mix, the egg, milk, cheese and stir to incorporate. Sprinkle on 1/2 tsp of salt and a shake of pepper and you're ready to bake. Add mixture to an 8x8" baking dish. Leave in oven for 35-40 minutes. Once top is brown and a butter knife comes out clean, let the casserole cool for 10 minutes, covered. Enjoy!
