Are you a potato lover? Potatoes are one of my weaknesses and hands down, a non-negotiable when we have burgers for dinner. A burger without potatoes is like a pizza without the cheese! Am I right? Lol Here is one of my favorite ways to enjoy spuds, my spicy, parsley potatoes recipe!
Let’s wash up those spuds!
The first thing I do is give my potatoes a little bath. I don’t peel my potatoes, because the skin is one of my favorite parts. I’m the weirdo that eats the peel and all when I have a baked potato. Lol So, I scrub them well under running water. Then pat dry with a paper towel. Pre-heat your oven to 425. Line a baking sheet with either parchment paper or aluminum foil.

Chop! Chop!
I’m feeling dicey! Diced potatoes that is! This is how I dice my potatoes.
- Cut them in half long ways
- Cut the halves in thirds long ways
- Then dice across the three slices to make uniform size chunks



Add your diced potatoes to your baking sheet.



It’s time to spice things up a bit!
My go-to seasonings are garlic powder and onion powder. I also added salt and pepper. Parsley was the main attraction here, though. Last we added a few sprinkles of hot pepper flakes. Yum!


After you add your seasonings, drizzle on some olive oil. You could have done this first as well.

Once you add the olive oil, toss the potatoes to coat them in the seasonings and the oil. You can also do this in a large bowl before adding them to the baking sheet. I just feel like this cuts down on the amount of dirty dishes you have.



Now it’s time for the sauna!
Add your potatoes to a 425 pre-heated oven and bake for 30 minutes. After the 30 minutes, remove the potatoes and toss them well. Return them to the oven and bake another 10 minutes. If they are not done after this, bake in five minute increments until they are fork tender.
Ding! First timer is done!

Ding! Second timer!

Oh my goodness, are you drooling yet? These were so good! We had them alongside our bacon cheeseburgers. Yum! Yum! Yum!

Ingredients for Spicy Parsley Potatoes Recipe :
- 6 large white baking potatoes
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 2 tbsp. parsley flakes or 1/2 cup of chopped fresh parsley
- 1 tbsp. salt
- 2 tsp. pepper
- 2 tsp. hot pepper flakes
- 1/4 cup of olive oil

Spicy Parsley Potatoes
Ingredients
- 6 baking potatoes
- 1/4 cup Olive oil
- 1 tbsp. Garlic powder
- 1 tbsp. Onion powder
- 2 tsp. each Salt & pepper
- 2 tbsp. Parsley flakes
- A sprinkled of Hot pepper flakes
Instructions
- Pre-heat your oven to 425 degrees
- Wash and scrub your potatoes under running water
- Dice your potatoes into one inch chunks
- Spread them out onto a cookie sheet covered with parchment or aluminum foil
- Add your seasonings and spices
- Drizzle the olive oil all over
- Toss the potatoes to coat them
- Place them into your oven for 30 minutes uncovered
- Remove them from oven and turn the potatoes
- Replace potatoes in the oven for 10 more minutes.
- Enjoy!
Notes
If the potatoes are not done after the 40 minutes, turn the potatoes and bake in five minute increments until fork tender.
