Sausage & Veggie Breakfast Casserole

Usually on the weekend, we like to make a big breakfast, but if we’re in a hurry, we just make a casserole instead. This Sausage & Veggie Breakfast Casserole is particularly good because it’s low carb! You can change out the veggies in this one to suit whatever you have available in your fridge. Instructions :

These are the ingredients that I used for this particular casserole. The eggs are not pictured here, but I used a dozen of those. I love keeping the pepper & onion mix available in my freezer because it’s much quicker than having to cut up these veggies. Other ingredients were a tomato, two types of cheese, butter, mushrooms, zucchini and beef smoked sausage.

The first thing I did was slice up my sausage.

Next up, dice up about 4-5 mushrooms. Afterwards, I diced up my zucchini. Another veggie you could use here is a yellow squash. Last veggie to dice up is our tomato. Yum!

Add all of those diced up ingredients to a baking dish.

Then you’ll add 2 cups of your frozen pepper & onion blend.

After you add the blend, scoop out 1.5 cups of the cottage cheese, and add that plus one whole stick of butter sliced.

Next up is our eggs. I used a baker’s dozen (13) and cracked them into a mixing bowl. Then I whisked them up into a frothy yumminess! I added that to my baking dish along with my seasonings and mixed it all together.

After everything was mixed thoroughly, I topped it with the shredded cheese. Then I mixed all that cheese in, also. I just didn’t want it to burn on top.

Place your casserole, uncovered, in a pre-heated oven for one hour.

A healthy breakfast option for those who are trying to watch their carbs but not miss out on good taste!

Ingredients

  • All beef sausage
  • 1 medium zucchini
  • 4-5 mushrooms
  • 1 tomato
  • 2 cups of frozen pepper & onion blend
  • 1.5 cups of cottage cheese
  • 1/2 stick of butter
  • 1 dozen eggs
  • 2 tbsp garlic powder
  • 2 tbsp Italian seasoning
  • 2 tbsp salt
  • 1 tbsp hot pepper flakes
  • 1 cup of shredded cheese of choice

Instructions

    1. Dice first four ingredients and add them to a baking dish.
    2. Add the next three ingredients and mix.
    3. Whisk your eggs and add those next.
    4. Sprinkle on your seasonings and shredded cheese.
    5. Mix thoroughly.
    6. Add to a 350 degree pre-heated oven for 1 hour.
