Are you a busy bee looking for simple breakfast ideas? I’ve got something that you’re gonna love then! This sausage & biscuit casserole couldn’t be any easier! Don’t let some of the ingredients scare you either! Sub those out for veggies you prefer instead!
Ingredients :
- 1 Polish sausage
- 12 eggs
- 1 can of large biscuits
- 1 cup of plain Greek yogurt
- 1 cup of frozen chopped spinach
- 1 cup of frozen pepper and onion mix
- 1 cup of shredded colby jack cheese
- Onion and garlic powder, salt, and cracked black pepper
Instructions :
Pre-heat your oven to 375. Now, you were probably thinking I was going to use breakfast sausage for this recipe, and you could actually use that if you want. Instead, I used a polish sausage, which is pre-cooked and ready to go!
All I did was cut it in half, sliced them down the center, then sliced them one more time. Afterwards, I just diced them up into small chunks.
Yum! Biscuits! One of my weaknesses is bread. Y’all, I just can’t seem to say no to a warm biscuit. But we’re not baking these biscuits your traditional way.
I used one can of large biscuits, and I quartered them and then quartered them once more.
By the way, I’m just tossing all of this in a large mixing bowl.
After the biscuits, I added about a cup of greek yogurt. Gotta get those probiotics in there, plus I love greek yogurt! You could use sour cream instead or heavy cream if you’re not a fan.
Spring Will Be Here Before We Know It!
One of the last things I added was one cup each of frozen spinach and pepper/onion mix. Then mix!
I thought my mixing bowl was large enough to completely mix the ingredients, but I ended up dumping it into the baking pan and finished mixing it there.
The seasonings I added were salt, cracked black pepper, onion and garlic powder.
Next, I cracked open 12 eggs and scrambled those up! I used the same mixing bowl as you can see. It’s all going in the same pan anyway, so why not?
After I poured in the scrambled eggs, I mixed everything up together really well.
Well, before I mixed it, I added our last ingredient, which is one cup of shredded colby jack cheese.
Doesn’t that look yummy already?!
Place it in a 375 degree pre-heated oven for 30 minutes. Take it out after the time is up, give it a gentle mix, then place it back in the oven for 10 more minutes.
