Do you love cookies? Who am I kidding? Who doesn’t love cookies?! When I first tried these cookies, I fell in love! My late friend Carole created this cookie recipe. This was the cookie that she would always bring to birthday parties or cookouts. Sometimes, she would just make them just because. She was always making something for someone. She is no longer with us on this side of heaven, so I’m certain she’s making cookies with the angels up there. So, in honor of one of my very best friends, I introduce you to Carole’s Cookies.
Carole’s Cookies
Something really nice about these cookies, is that they are gluten free. Yep! No flour cookies! Now, sugar on the other hand.. I haven’t tried to transform it to sugar free just yet, but I’m working on it.

Ingredients :
1/2 cup of sugar
1 cup of brown sugar
1 tsp salt
2 eggs
1 tsp vanilla
1 tsp baking soda
1 cup peanut butter
1 cup oats
1 bag of chocolate chips
Recipe Directions :
Mix everything except the chocolate chips together. Once everything is mixed well, fold in the chocolate chips. Use a cookie scoop to drop onto a parchment lined cookie sheet. Bake 10-12 minutes at 350 degrees. Do not overbake. It will look like they are not done baking, but they will set up once they are out of the oven. Makes about 2 dozen cookies.




They are the ooey gooey-est cookies right out of the oven, but they still taste great hours later and even the next day. It’s just a really yummy cookie! I know you’ll love them! Let me know if you give them a try!
