We love salmon patties in our household! We both grew up eating them on a regular basis. Since we started eating more low carb meals, we have looked for ways to turn our favorite meals into healthier ones. So, let me show you how we make our low carb salmon patties! I promise, you won’t be able to tell a difference.

Let’s Get our Hands Dirty!
The first thing that I do is drain the juice off of three cans of salmon. Then carefully transfer them to a mixing bowl.

What I like to do is pour out the salmon into my hand, and then discard skin and bones into the empty can.

You honestly do not have to removed these bones. That is up to each individual. Those bones are going to dissolve into your mix, but you might want to crush them up prior to mixing them in. We have always just removed them.

The Almighty Egg!
After you get all your salmon into your mixing bowl, add your eggs.

I add as many eggs as I use cans of salmon. So, I used three cans of salmon, so I’m using three eggs.

My son decided he wanted to help, so here he is cracking an egg for me.

After our eggs, we started adding our chopped veggies.

Dice up a whole onion! It can be white, yellow or red. Your preference. I like either white or yellow for this recipe. Red is a little strong for this one in my opinion.

Next is the bell pepper! Yum!

Gotta have that bell pepper! If I could have bell pepper in every meal, I would. It is one of my favorite veggies! Have you ever smelled a bell pepper straight from the garden? The aroma is like none other.

The first thing I do is cut the top off the bell pepper.

Next, I cut the pepper in half vertically, and removed all the insides. Afterwards, I slice each half vertically.

Add both your bell pepper and your onion to the mixing bowl.

Next up is your mushrooms. I like to use these baby bella mushrooms. You can get them whole or sliced. I like to slice them myself.

First, I like to slice them thinly vertically.

Then, I rough chop them with a large ginsu.

Now, let’s add them to our mixing bowl!

Are you hungry yet?
Here are the seasonings that we are adding to our salmon patties. Garlic and onion powder, Old Bay seasoning (my hubby’s fave), salt and pepper, and crushed red pepper.

So, this is a low carb recipe. Typically, you see either cornmeal, breadcrumbs or flour being used for salmon patties. We now use almond flour.

I added about a cup of almond flour to this recipe.

Then you just mix it all together.

Add about 1/2-1 cup of coconut oil to a large low profile pan on medium heat or you can use an electric skillet. Just make sure that the bottom is covered with the oil.

I use my hands for this. Just take out a scoop and make a ball, flatten it a little, and add it to your pan.

I was able to get seven patties in my pan at one time.

After about 10 minutes, flip your salmon patties. The first side should be golden brown like this. If they are not, let them fry for a few more minutes.

After about 10 minutes on the second side, check them to make sure both sides are golden brown like this. They should be done if they are.

They look so yum!
After they are cooked thoroughly, I like to place them onto a dish covered with a paper towel to soak up the oil.

Once the oil has absorbed enough, they are ready to eat! We like them with a side of ranch dressing!

I promise you will not be able to tell that these are low carb. They taste fabulous!

- 1/2-1 cup of coconut oil
