If you love cheesecake and lemon, this recipe is for you! It’s super easy and oh so yum! I borrowed a recipe from my daughter’s father’s side of family, and put my spin on it. I hope you enjoy this Lemon Cheesecake Cups Recipe! Make sure to check out our other Dessert Recipes while you’re here!
Ingredients :
- Vanilla wafers
- 2 blocks of room temp cream cheese
- Lemon pie filling
- 2 room temp eggs
- 3/4 – 1 cup sugar
- 1 tsp vanilla
1.Bring Ingredients to Room Temp
First thing to do is to bring your cream cheese and your eggs to room temperature. I just take them out of the fridge and place them on my counter for about 30-45 minutes. Pre-heat your oven to 325 degrees.
2. Mix Cream Cheese, Sugar, Eggs, & Vanilla
Next, add your cream cheese and sugar to a stand mixer. I love my Kitchen Aid for this step. Mix on medium until it’s smooth, adding the eggs one at a time.
Last, add your vanilla and mix until smooth.
3. Scrape the Sides
Your mix will naturally gravitate to the sides of the mixing bowl. Use a spatula to scrape the mix down into the bowl and mix again until smooth and you see no lumps.
4. Prep Your Paper Liners
Place paper cupcake liners into a muffin pan and crush 1-2 vanilla wafers into each. You could also use a food processor for this step, but I find it just as easy to crush the wafers with my hands. Tastes no different!
5. Add Your Cheesecake Mixture
I use a cookie scoop to add just the right amount of cheesecake mixture into each muffin cup. I was able to fill 18 liners, using a 6 & 12 muffin pan. Fill each one about 3/4 of the way full.
Bake them for 30 minutes on 325. They will just start to crack when they are done. Cool them completely before adding the topping.
6. Add the Topping to Each One
I used canned pie filling to top them once they were cooled. I made lemon ones, blueberry ones, and cherry ones.
Keep them refrigerated until ready to serve. They are best cooled for 24 hours. Enjoy cold!
