Ingredients :
- 2 cups of self rising flour plus a little extra for using on your cutting surface
- 1 tbsp Salt
- 1 tbsp Sugar
- 1 stick of butter, separated
- 1 cup of milk

Instructions :
Pre-heat your oven to 450 degrees. The first thing you want to start with is self rising flour. I used to use just any flour, but after tasting my brother in law Steven’s biscuits and learning that he uses nothing but White Lily flour, it is now what I also prefer. I always like to sift my flour, using a Hand Crank Flour Sifter to remove any hard pieces present. The last picture shows what I mean. These are just clumps of the flour, and are harmless, but they will cause hard pieces throughout your biscuits. This is completely optional however. If you don’t have a sifter, you can skip this step, but I did add an Amazon link to a really nice sifter if you’re in the market for one. They really do make a difference, I promise.

Next, I add the salt and the sugar. If you are on a low sodium diet, you can skip the salt. After I mix those in, I add my butter. You can use salted or unsalted butter, your preference. My preference is salted. And the easiest way to add butter to a biscuit mix is with a cheese grater! Yep! A Cheese Grater! Another tip that I learned from my brother in law. Thanks Steven! Make sure your butter is cold from the fridge or from the freezer. Afterwards, mix the grated butter into the flour mixture. Don’t forget to save a 1/4 of the butter to grease your Baking Sheet and to top your biscuits.

Last ingredient to add is the milk! Pour it in and mix it all together. The mixture will be sticky, but you will add a little more flour in the next step.

Let’s Finish These Biscuits!
Now, if you wanted, you could go ahead and make drop biscuits with this mix. Use a cookie scoop or spoon to portion out your biscuits, adding them to a baking sheet, proceeding to the baking portion of this recipe. I prefer to cut my biscuits now. Again, your choice. This is a small picture, so it might be hard to see, but this shows some drop biscuits that I have made with this recipe.

Finally, if you want to cut your biscuits, flour a clean surface, then scoop out your dough onto the floured surface. I just use my clean counter tops. You can place down a piece of parchment paper if you’d like, but as long as the counter was cleaned right before, it is completely acceptable to use that. Sprinkle a bit of flour on top of your mixture and fold it a couple of times. Don’t overwork the dough or your biscuits will be tough. Then, create a circle or a square shape making your dough about an inch thick.

Once your dough is patted out and ready, using a Biscuit Cutter or a small cup, cut your biscuits and add them to your buttered Baking Sheet. I like to make sure the sides are touching each other, because it helps the biscuits rise. Another tip is to dip your cutter into a small bowl of flour to coat it after each cut to prevent the biscuits from sticking to your cutter. You can see the pieces of butter inside the biscuit dough and that will create beautiful flaky layers inside your biscuits.

Depending on the size of your cutter, you may only get 8-10 or as many as 15-16 biscuits from this recipe. The cutter shown is two inches in diameter.

Time for More Butter! Yum!
Last step before adding them to your oven is to brush the tops with the remaining butter, melting it first. Or you can just cut it up and add pieces of it to the tops of the biscuits. Lastly, bake the biscuits for 10-12 minutes, watching for browning on top. Once browned, they are done.

These biscuits are delicious for breakfast, eaten with sausage and a sliced tomato!

But you can have these biscuits with your dinner, too! When I make beef stew or roast beef, this is what we have with it. So delicious and they get gobbled up quickly!
