Chunky Lasagna Recipe

Ingredients:

  • 9 lasagna noodles
  • 1.5 pounds of ground meat
  • 1 jar of spaghetti sauce
  • 1 onion
  • 1 zucchini
  • 2 – 15oz containers of ricotta cheese
  • 2 cups of cottage cheese
  • 2 eggs
  • 1/2 cup of parmesan cheese
  • 4 cups of mozzarella cheese
  • 1 tbsp garlic powder
  • 1.5 tbsp Italian seasoning
  • 3 tsp of salt

First, start to brown your meat. I used beef, but you could use ground chicken, turkey, lamb, etc. Also, preheat your oven to 375.

While that is browning, work on chopping up your veggies. I used an onion and a zucchini and finely diced them up.

After your meat has browned, drain off the fat. I do this by using a colander in the sink, while hot water is running alongside it. It helps to add some dish detergent to the drain to break up the grease. If you’re not comfortable doing this, you can dispose of the grease in the trash after it has cooled. Once your meat is drained, you can add your chopped veggies and sauté on medium until the onions are translucent, about 8 minutes.

Next, bring a large pot of water to a rolling boil. Then add your lasagna noodles and cook until al dente, about 8-10 minutes, using a large serving fork to keep them separated.

While your pasta is cooking, add your seasonings to your meat/veggie mixture. I added 1 tbsp garlic powder, 1 tbsp Italian seasoning, 2 tsp of salt, and a tsp of pepper.

After that is mixed in well, add your entire jar of spaghetti sauce. I like this tomato basil garlic sauce from Walmart. Look how chunky, yummy that looks. Simmer that for about 10 minutes on low.

While that is simmering, make your cheese mixture. I used 2 containers of ricotta, 2 cups of cottage, and 1/2 cup of parmesan cheeses, in which I added two eggs and the remaining amounts of seasonings.

Now, let’s build your lasagna. Start by adding about 1.5 cups of the meat sauce mixture to the bottom of a 9×12 baking pan.

Next, add three of your lasagna noodles.

Now, add half of your cheese mixture.

Last, add half of the bag of mozzarella cheese. Then sprinkle on some garlic powder, Italian seasoning, salt, and pepper.

Now, you want to repeat the three steps before this last one. Another layer of the pasta noodles, the cheese mixture, and the meat sauce. Before you put on the other half of the mozzarella cheese, add the last three lasagna noodles. Then top it with the remaining mozzarella cheese. Sprinkle it again with the garlic powder, Italian seasoning, salt, and pepper. Cover with foil and bake on 375 for 30 minutes.

After 30 minutes, remove the foil and bake for another 10 minutes until the cheese is nicely melted on top. Once it’s finished, remove the lasagna from the oven and let it sit 10 minutes before cutting into it. Then enjoy with some garlic bread and a side salad!
